Changing the cell within a formula to correspond with the current date.

I am trying to make a spreadsheet on (Excel 2016, Windows) where the end product is a graph that updates itself with the date.

The spreadsheet is updated in real time and it enables me to have an instant snapshot of manpower.

For example, on monday the 1 Jan 19 I have 10 people in work, 10 people sick and 10 people on education courses.

On tuesday  2 Jan 19 I have x amount of people sick, in work or on course and this continues for the rest of the year.

How could I get the graph to update itself automatically and reflect this without having to do 365 graphs for the year or constantly change the formula.

Any help would be greatly appreciated.
